Killer Wail remains on top
This Saturday-only truck in east Tulsa has long been the state's best BBQ joint.
To paraphrase Ponyboy Curtis, I had great expectations during a recent trip to East Tulsa, as it had been far too long since my last visit to Killer Wail Barbecue. Oliver Larrabee’s Saturday-only truck had been at the top of my Oklahoma BBQ list since opening in 2018, and it’s done nothing to move itself from the top of the state’s smoked meat mountain.
Killer Wail is the kind of hidden treasure you hope never changes, and so far it hasn't.
“People get into the barbecue game because they like to cook and then they make every decision that gets them out of the kitchen,” Larrabee told me two years ago. “They tie themselves to the hiring and firing, the personnel side, but I really want to lean into just cooking.”
Oliver continues to lean into that philosophy.
I’m always stunned by the quality of his brisket; tender slices with crumbly bark and a smooth, smoky flavor. I’ve always felt Oliver is a pro at the pre-cook trimming because each slice has the perfect ratio of fat.
The brisket alone is worth the visit, and I’d be willing to extend grace for the ribs and pork not being as stellar. However, Oliver consistently brings greatness to everything he serves.
The pork ribs aren’t too tender as they stil have a solid mouthfeel.
I also don’t think there is a better beef rib in the state, which Oliver occasionally serves.
Killer Wail has consistently reached greatness for several years now and seems poised to continue its reign.
